In 1998, we decided to take our family farm, Ridgefield Farm, from a commercial cattle operation to a purebred cattle operation. We chose Braunvieh cattle, a breed that originated in the Swiss Alps that yields a very fine-grained meat with a limited amount of waste fat and enough marbling to insure wonderful flavor. All of our beef comes from cattle that are at least half Braunvieh. We go the extra step that very few beef producers go today, we dry age our beef for two weeks, then prime cuts are aged an additional 2 weeks in vacuum sealed bags. Brasstown Beef was born from the positive feedback from the people who tried our beef and proclaim it to be the best tasting and most tender beef they ever had! Our beef is offered in fine dining establishments in NE Georgia and Western North Carolina. We are also offering pork from breeds know to produce excellent marbling, texture and great flavor. Our beef and pork comes locally grown and humanely raised cattle and pigs. Starting October 30th, the \Farm Store\ at Ridgefield Farm will be offering Brasstown Beef and Brasstown Pork, both fresh and frozen in vacuum packaging. Our store hours will be 9:00 am to 5:00 pm, Monday through Friday. Come visit us and try our beef and pork.
